Adjustment, standardisation, restriction, variation. Who would have thought these words would ever come close to the description of a meal, a bite of food, or the preparation of dinner. But, for many living with dysphagia (dis-fay-juh; swallowing impairment), this is their reality. Meals require careful adjustment to ensure that each mouthful is swallowed safely. Know that these terms don’t need to define you. We simply need to put life back into each heartfelt meal.

Food is fundamental in how we engage with our loved ones, how we fuel our lives, express our personalities, and our religious beliefs. Delicious food can spark moments of joy, even in the face of adverse conditions. These meals have been inspired through years of clinical experience, in the homes, hospitals, aged care facilities and hearts of many clients. Simply Modified has been created as the perfect companion to your dysphagia journey.

Along with your consulting Speech Pathologist, this cookbook will stay with you as a guide to the preparation of foods across various diet levels. About the Author

Brie Simons is a Speech Pathologist and founder/director of Network Speech Pathology, with a love for cooking delicious meals. She has worked in a range of clinical settings around Australia, supporting clients with swallowing difficulties on the background of various conditions, including Parkinson’s Disease, Motor Neuron Disease, Head and Neck Cancer, Stroke, Multiple Systems Atrophy, and lifelong disabilities. Simply Modified is Brieanna’s first cookbook. An ode to her clients who experience swallowing difficulties and to increase people’s safety and enjoyment at mealtimes. Bringing people together with the love of simply (modified), wholesome cooking.
